This season, North Carolina is in for an abundance of yummy strawberries. Strawberries are a delicious warm-weather fruit, that are packed with Vitamin C, Fiber, and Antioxidants. These nutrients help to benefit immune and digestion system health. Our NC State Extension Specialist, Dr. Mark Hoffmann reports strawberry production will see peak around this time, with harvesting continuing into early June. So, the next time you’re safely taking a trip to the grocery store and practicing social distancing pick up a carton of NC strawberries, and make this delicious recipe for the warm weather to come, sparkling strawberry lemonade, provide by the Academy of Nutrition and Dietetics.

Sparkling Strawberry Lemonade

Ingredients

  • ¾ cup sugar

  • ¾ cup water

  • 16-ounce container of cleaned and hulled strawberries

  • ¾ cup lemon juice

  • 3 cups plain sparkling water

Directions

  1. Combine sugar and water in a medium saucepan. Bring to a boil over medium heat, stirring until sugar dissolves. Remove from heat and cool completely, about 30 minutes.

  2. Combine strawberries and half of cooled sugar mixture in a blender. Cover and process until very smooth, about 1 to 2 minutes. Transfer to a 2-quart pitcher.

  3. Stir in remaining sugar mixture and lemon juice. Add sparkling water just before serving. Enjoy!
