When canning, it's important to use tested and evidence-based resources. Our SafePlates team has done an excellent job at compiling a list of these available canning resources.  However, we know some people prefer a physical copy of a book. All of our libraries here in Duplin County have a copy of the most recent edition of So Easy to Preserve! This is a great resource that covers canning and other methods of home food preservation. It's full of tested recipes and background information on the canning process. Unsure the different between hot pack and raw pack? Curious about the difference in boiling water bath method and pressure canner method? This is a great resource to dive into the science and explanation around canning, pickling, freezing, and drying foods. Let us know if you check it out!
